Canada Day means BBQ, getting together with friends and fireworks. We were invited to my friends house for Canada Day so we thought this would be the perfect time to try our new fifth wheel out. Well it went pretty good although Derek had to work the next day so that meant we all had to be up early!! So i put Jacob to work on picking up empties from the night before!!
I made a simple potato salad
2lb bag of potatoes, peeled, diced and cooked
4 stalks celery sliced
radishes sliced
2 onions chopped
6 boiled eggs, chopped
dressing:
3 cups mayo
4tbsp milk
4 tbsp vinegar
makes enough salad for 20-30 people
I also made a guacamole dip
avocados
minced garlic
lemon juice
Then on Saturday we were invited out for BBQ and smores(mmmm) at another friends house. I made a pasta salad to bring
1 pkg pasta, cooked
1 pkg sliced mushrooms
1 pepper chopped
1 onion chopped
1 head broccoli, blanched and chopped
2 tomatoes chopped
ham diced
Dressing
1 bottle ranch dressing
1 tsp curry powder
makes 20-30 servings
Today (Sunday) woke up with a huge head cold and basically stayed in bed until 4pm!!! Thank god Derek was home to watch/entertain the children. I had to cancel a girls night out to dinner and Katy Perry concert(no I'm not a huge fan!!...girlfriend got free tickets) Not heart broken but sometimes its nice to get out of the house without the kids. Looks like another busy week, hopefully going to get some strawberries to make Jam, Saunders Farm, and Camping on the weekend.
